Enough of your favorite
Ribs
2 aluminum trays (large
enough to hold all your
ribs.
1 aluminum tray to hold
BBQ sauce
Your favorite BBQ sauce
Assemble the pans as
shown
As
you can see, I have
placed a rack on the
bottom of one of the
trays to keep the Ribs
from sitting in there
own grease. The smaller
tray contains my
favorite BBQ sauce
Instructions
Simply cook
the ribs on your BBQ and
cut them up into single
serving size
Barbeque your ribs as
you normally would, but
do not apply any BBQ
sauce, that comes later.
Also the less flame ups
and slower you can cook
them the better. On my
gas grill it usually
takes around 30 minutes
to cook 3 racks of ribs.
Also since part of the process
is baking the ribs
inside the aluminum pans
do NOT overcook the
thinner pieces. Simply
cut the cooked parts off
in serving sizes and
place them into the pan
as described below.

Once the
ribs are
done
,(remember
do not
overcook
them as
they
will
bake for
over an
hour
finishing
the
cooking
process.
Now load
them
into the
tray
with the
rack,
and make
sure you
do NOT
cover
the BBQ
sauce as
the
grease
dripping
of the
ribs
will
contaminate
the
sauce
Take the
second
tray and
invert
it over
the
first
and here
is where
you can
get
inventive.
How to
secure
the top
to the
bottom.
I have
simply
folded
one rim
over the
other
and it
stays
fairly
well, I
have
also
used
metal
paper
clips
(bulldog
clips)
and
finally
aluminized
tape. It
doesn't
have to
be air
tight
but the
less
steam
that
escapes
the
better.
Turn the
heat
down to
about
300 -
350
degrees,
close
the lid
of the
BBQ and
let them
bake for
an hour
or so.
if you
do not
have an
upper
shelf
then
make
sure you
turn off
one side
of the
BBQ and
place it
over the
indirect
heat.
As they
bake the
BBQ
sauce
cooks
down,
evaporates
and
penetrates
the ribs
, plus
the
steam
makes
the ribs
very
tender
and
literally
falls of
the
bone.
Now I
use this
hour to
put
potato's
(usually
Mc'ain
roasters)
in the
BBQ as
well and
let them
bake for
the
hour.
An hour
later set
the table ,
bring in the
ribs and
remove the
cover. Watch
out for the
steam, and
enjoy.
There are
two options,
you can
simply serve
as is and
people can
use the
reduced BBQ
sauce to
their
personal
taste while
some
restaurants
will now
place the
ribs back on
the
BBQ grill,
add the
sauce and
cook for
only a few
minutes
Either way
you choose
to serve
them, these
ribs do not
need a
knife, no
overcooked
dry ribs
anymore
simply tear
them apart.
This is a
favorite
with my
kids, and
yes that is
snow on my
deck. It is
a great way
to get BBQ
flavor
without
having to
babysit the
BBQ.
